Chefs in Colorado turn to local farms for the freshest, seasonal products and create dishes where Trout, Lamb, Bison, and Game are paired with farm fresh vegetables and fruits. Our Chefs have created a menu that truly showcases Colorado cuisine.
Rainbow Trout with Palisade Peach Compote starts your journey, then continue on with Colorado Rack of Lamb with fresh Sage and Toasted Pine Nuts with a Cherry Demi-Glaze served with Roasted San Luis Valley Potatoes with Haystack Mountain Goat Cheese and Hickory Smoked Bacon.
