A Cooking Foundation Class
Soup is the most comforting and fortifiying part of any menu. Every country has a soup that seems to define their culture and some soups even have special healing properties.
To make a great soup, you must first start with a flavorful stock. The class begins by making a chicken stock as a base to build the soups.
Soups fall under three categories. Thick (puréed), Clear (clear broth based soups) and Specialty (International). You will learn how to cook an example of each:
Soupe à l'oignon gratinée - French onion soup (specialty)
Soupe au Pistou - Provençale broth, bean and vegetable soup garnished with a basil purée (Clear)
Tomato cream soup with parmesan crackers (Thick)
In this basic soup course, you will learn how to create a base, layer your flavors, and how to make excellent soup for your family and friends.

No alcoholic beverages will be served to anyone under the age of 21. Please bring identification with proof of age.
