Sauces 101
A Cooking Foundation Class
The person responsible for making the sauces (Saucier) is one of the most revered staff members in any kitchen. It is an art and can make or break any dish. We want to take the fear out of sauce making for you and in order to do that you need to learn how to make at least four of the five mother sauces.
The French created the rules to fine sauce making and once you learn these simple classic sauces you will have the confidence to add other elements to them. Thereafter the sauces you create will only be limited by your imagination.
In this class you will learn how to make Béchamel which will become a luxurious cheese sauce used to make Mac and Cheese
Then you will make a Velouté - Gravy that will turn into a delicious Chicken Marsala
Our final dish will be a nice seared rib eye steak with two classic sauces. The rich and luxurious Sauce Bearnaise and a Red wine Demi Glace - brown veal sauce
You will leave with a few good tricks you can carry into every dish you make in the future.
