Vegetarian Cuisines of the Southwest - The Tamales
A Regional Foods Class
Southwestern cuisine in the United States combines foods of Native Americans, the Spanish and Spanish Indian settlers from Mexico. Traditional dishes are slow cooked and slow grilled. Vegetables, especially corn, were an essential element of any dish. Tortillas, tamales, chilies (both red and green), beans, breads were mainstays of Southwestern cuisine.
Our Chefs have created an incredible menu that highlights a vegetarian slant to these traditional foods. You will prepare Grilled Vegetable Tamales topped with a Grilled Poblano Crema and paired with Ensalada Nopales (which is a delicious cactus slaw).
