It's hunting season in Colorado and here at the Kitchen Table we want to pay hommage to the mighty animals that can (if we are lucky) end up in our kitchens for us to cook. As hunters you have worked hard to bring home Wild game and now you have to figure out how to make it into something special worthy of the sacrifice.
Chef Tom has come up with some great dishes featuring three common and readily available wild game animals that you will learn how to prepare.
Buffalo chili with smoked cheddar and crispy buttermilk onions
Venison loin with juniper, rosemary red wine sauce and potato soufflé
Barbeque duck-2 ways: spiced rubbed duck breast and chili tomato braised legs with white cheddar grits and spicy coleslaw
