Italian Regional Cuisine - Apulia (The Heel of the Boot)
A Regional Foods Class
Welcome to Apulia, the enchanting land lying between the Adriatic Sea and the Dauni Mountains located in the "heel of the boot" in Italy. The coastal and inland region provide diverse ingredients that create flavors uniquely Apulian. Fresh seafood, lamb, fruit, seasonal vegetables, cheese, grains, pastas, olives and olive oils, to name a few, are typical Apulian products known and loved all over the world. Apulia's particular micro-climate, along with its antique and famous vine traditions, also make it a paradise for wine.
Our chefs have created a menu which highlights delicacies from Apulia. Start with an eggplant, zucchini and tomato topped potato crust pizza. Next comes stuffed mussels with Pecorino. Finally, prepare delicious lamb and onions entrée which is baked in foil and served with spinach, pine nuts and raisins.
INCLUDED in the price of the class is a flight of incredible wines from this up and coming wine region of Italy. Taste the Leone de Castris Salice Salentino Rosso Maiana 2006 with the potato crust pizza, the Cantine Botromagno Gravina Bianco 2008 with the stuffed mussels and with the lamb dish taste an opulent Leone de Castris, Salice Salentino Rosso Riserva 2006
