There is nothing in the world like AMERICAN REGIONAL CUISINE. The UNITED STATES is a melting pot of ethnic cultures, and we have embraced these multi-cultural cuisines, infused them with distinct local ingredients, to create our own UNIQUE regional cuisine.
SO, LET'S TAKE A FOOD TOUR OF THE USA
CALIFORNIA!! WOW !! How does one cover this incredible diverse Region in one class? We should really break it up into Northern, Central, and Southern California to do it justice. Each of these "Regions" have completely unique cuisines heavily impacted by the immigrants that migrated to these areas.
In Northern California, with wine country near by, French, Italian, Mediterranean, well as Asian-inspired fare, define this Region's cuisine. Use of fresh, local ingredients sourced from local growers and farmers, compliment their mind-boggling source of seafood.
The agricultural abundance and diversity of California's Central Region provides fresh produce throughout the state.
Colonial Spanish roots, Mexican Territorial history, and the Native Americans population, heavily influential the cuisine of Southern California.
The one thing they all have in common is that amazing CALIFORNIA COASTLINE. So if we focus on that common factor, we can do this entire Region justice! Let's start at the top and "cruise on down" the Coastline to the bottom.
Central California's Artichoke Napoleon (Quail Lodge, Carmel Valley)
Northern California's Dungeness Crab Cioppino served with Crusty Bread (San Francisco)
Southern California's Jonathan Apple and Sweet Cheese Empanadas (Julian/San Diego).
We've paired some delicious California wines to compliment this menu.
Talk about California Dreamin'.
