There is nothing in the world like AMERICAN REGIONAL CUISINE.  The UNITED STATES is a melting pot of ethnic cultures, and we have embraced these multi-cultural cuisines, infused them with distinct local ingredients, to create our own UNIQUE regional cuisine.

SO, LET'S TAKE A FOOD TOUR OF THE USA

WOW! Amazing how the foods from this Region can have had such an impact on the rest of the United States. Arizona, New Mexico, Utah and Nevada are in the spotlight today.

Now, it goes without saying that the Native Americans (Navajo, Apache, Zuni, Hopi, Pima to name a few) had the greatest impact on the cuisine of the Southwest, followed by the Spanish, the Mexicans, and the European settlers that followed.

To the culinary table, the Native Americans, who were expert farmers and had complex irrigation systems in place (much to the surprise of the settlers), brought the infamous "Three Sisters" (corn, beans, and squash), the Spanish brought cattle and wheat, the Mexicans brought spices and seasonings, and the other settlers brought fruit, berries, and other delicious "Stuff".

Doesn't it just makes your mouth water in anticipation of the delicious foods to come (and you will probably need a lot of water, or wine, with this menu!!).

Corn Cakes with Calabacitas and Queso Blanco Salsa
