Chile has truly been blessed by the culinary gods. Nestled between the Pacific Ocean and the Andes, lies Chile's gardens, fields, orchards and vineyards which produce an incredible variety of vegetables, fruits and wine. 

While the flavors of Chilean cuisine have been strongly influenced by the Spanish and European cultures that colonized the area, it is the indigeneous dishes that remain the most popular.   Corn, Beans, Squash, Potatoes (to name a few) are common, simple ingredients that are magically turned into delicious, sophisticated cuisine. 

Our Chef has selected some classic dishes to highlight the amazing foods from the region:

We can't forget the Chilean vineyards.  The wines from Chile are no longer a secret.  The world is discovering their excellent, world class Cabernet Sauvignon and Sauvignon Blanc.  Chileans consider their grapes, in particular their own vintage grape Carmenere, to be a prized natural resource.
